Braised Beef
Braised Beef
Instructions:
1. Clean the whole piece of beef, removing any impurities, and cut it into large chunks that will fit in your pot.
2. Boil a pot of water, add the beef, bring it to a boil again briefly, then remove and set aside.
3. Heat a pan, add vegetable oil, and when the oil is about 60% hot, first stir-fry chopped scallions, ginger, and garlic. Add cooking wine, soy sauce, salt, and other seasonings, pour in chicken broth (or water if needed, but make sure it’s hot – this is a tip), and the beef. Cook over high heat for 20–30 minutes, then reduce to low heat until the beef is tender and well-flavored.
4. Once the beef and broth have cooled, refrigerate until thoroughly chilled, then slice and serve.
