Sanhe Tea-Flavored Dried Tofu is a specialty of Sanhe Town, Feixi County, Hefei City, Anhui Province. It is as thin as paper (approximately 0.1 cm thick), featuring pure color, a long-lasting aroma, a delicate yet elastic texture, and a rich aftertaste.

Sanhe Tea-Flavored Dried Tofu is made from high-quality soybeans, with the production process adhering to traditional methods. It involves steps such as grinding into slurry, straining the slurry, boiling the slurry, coagulating the soy milk, pressing into blocks, and shaping and boiling with gauze. The key to making Sanhe Tea-Flavored Dried Tofu lies in the later stages. After pouring the soy milk onto a drying rack, it is pressed into thin white tofu slices about 0.5 cm thick, then wrapped in gauze and further compressed with an iron press and hydraulic jack for 20 hours to form the tofu base. Finally, a broth flavored with five-spice and star anise is prepared, the tofu base is immersed in the broth, and gently simmered over low heat for about 5 hours. After removal, it is dried and packaged.

Sanhe Tea-Flavored Dried Tofu offers a perfect balance of “numbing, spicy, sour, sweet, and salty” flavors. The production techniques mainly involve “pressing” and “boiling,” and the product is known for becoming more flavorful the more you chew, allowing all five tastes to gradually emerge. Currently available brands include Panji, Luoji, Zhangji, and Danji, offered in loose, bagged, and sealed packaging. With its premium ingredients, meticulous craftsmanship, and unique flavor, Sanhe Tea-Flavored Dried Tofu is expanding beyond Sanhe and gaining popularity both domestically and internationally.
