Jinzhongzi Brewing Ancient Cellar Ruins

The Jinzhongzi Brewing Ancient Cellar Ruins are a cultural relic protection unit of Anhui Province.

The ruins of the Jinzhongzi Brewing Ancient Cellars are located in Yingzhou District, Fuyang City, dating back to the Ming and Qing dynasties.

The ancient cellars from the Ming Dynasty are among the oldest, longest continuously used, and best-preserved Daqu liquor fermentation pits in the Huang-Huai region, and the heritage of these old cellars is an important part of Jinzhongzi’s brewing culture. The more beneficial microorganisms and aromatic substances in the cellar mud, the richer the wine aroma. According to tests, the microbial populations in the Ming and Qing Dynasty cellars of Jinzhongzi number in the hundreds. The fine quality and unique taste of Jinzhongzi liquor fermented by these microbes are truly exceptional. These ancient cellars have become a model for cultivating microbial strains from Jinzhongzi’s brewing cellar mud.

In 2012, the Jinzhongzi Brewing Ancient Cellar Ruins were designated as part of the seventh batch of provincial-level cultural relic protection units by the People's Government of Anhui Province.

Protected Area: 3 meters east of the three ancient cellars Gu1, Gu4, and Gu5 in the south building manual workshop; 3 meters south of the three ancient cellars Gu5, Gu6, and Gu7; 10 meters west of the ancient cellar cluster; 12 meters north of the two ancient cellars Gu1 and Gu2.

Construction Control Zone: 200 meters east, 50 meters south, 60 meters west, and 120 meters north of the protected area.
