The burger craze continues to heat up. Triple A launches a Korean-style kimchi burger to compete in the market.

Last updated 2026-09-24 — The burger craze continues to heat up, and in the fiercely competitive food scene of East District, a new burger joint called Triple A has just opened. It specializes in American-style burgers infused with Korean culinary elements such as kimchi, grilled meat, and tofu. Moreover, the head chef and restaurant owner, Choi Deok-san, once ranked in the top 20 on the Korean cooking competition show "MasterChef."

The burger craze continues to heat up, and in the fiercely competitive food scene of East District, a new burger joint called Triple A has just opened. It specializes in American-style burgers infused with Korean culinary elements such as kimchi, grilled meat, and tofu. Moreover, the head chef and restaurant owner, Choi Deok-san, once ranked in the top 20 on the Korean cooking competition show "MasterChef."

Sam, the operations manager of Triple A, said that the base sauce used in the burgers is made from fresh tomatoes, paired with garlic, mustard seeds, and hand-whipped egg yolk mayonnaise made with fresh egg yolks. For the meat, they select high-quality Australian beef free from hormone injections, grind it to a 2:8 lean-to-fat ratio, and hand-patty it daily. Choi Deok-san explained that hand-pattied burger patties hold their structure better when cooked, allowing the juices and meat to meld, resulting in a superior texture.

Before coming to Taiwan, Choi Deok-san ran an American burger shop called A Burger in South Korea. He decided to start a business in Taiwan to be with his wife and children. Choi said that while he used to sell American burgers in Korea, the competition in Taiwan’s American burger market is fierce. To differentiate his offerings, he specially incorporated Korean ingredients like kimchi, grilled meat, and tofu into American-style burgers, launching new flavors such as the Korean BBQ Burger, Kimchi Burger, and DooDoo Burger. As for the kimchi used, Choi specifically sought out kimchi from southern Korea and had it air-freighted to Taiwan. He noted that southern Korean kimchi is tangier and spicier, which helps cut through the richness.
