Many people love pancakes, but pancakes aren’t limited to just Belgian Liege waffles. Japanese-style pancakes are moister and less dry, with a softer, chewier texture that many women particularly enjoy. For example, securing a seat during peak hours at the newly opened Kyushu Pancake Coffee Songyan branch can be quite difficult.

Kyushu Pancake Coffee
The Japanese pancake specialty store “Kyushu Pancake (Kyushu Pancake)” has recently opened its second branch. The ingredients for Kyushu Pancake are made from seven types of wheat and grains produced locally in Kyushu, Japan, preserving the natural flavor of the grain flour. It completely avoids additives such as emulsifiers, fragrances, modified starches, and aluminum-containing leavening agents, allowing customers to enjoy delicious food while ensuring safety and health. The Songyan branch also introduces brand-new matcha-flavored “Kyushu Matcha Tiramisu Pancake” and “Kyushu Matcha Mont Blanc Pancake,” along with a series that also uses Uji matcha tea from Kyoto.

Apricot Peach Pancake House
In May 2013, the well-known brand “Apricot Peach Pancake House” from Tokyo’s Harajuku Cat Street in Japan entered Taiwan, staying true to its original style by bringing the art-and-fashion fusion of its Harajuku store—including ingredients, tableware, and gallery displays—to Taipei. The Apricot Peach Pancake House is known for its moist and FUWA&MOCHI (soft and chewy) pancakes. It uses a high-end imported steam griddle from the United States to ensure even heat distribution for a fluffy, fragrant, and tender texture. It also carefully selects naturally grown Hokkaido wheat flour, blending low-gluten flour with a refreshing taste and high-gluten flour with a rich texture in a specific ratio to create a unique pancake mouthfeel.

White Cosy Taipei Branch
White Cosy is a dessert café established by the renowned Hokkaido dairy company “Yotsuba Dairy” (from Tokachi, Hokkaido), which has locations in Japan including the Sapporo PASEO store, New Chitose Airport store, and the Solamachi store at Tokyo Skytree. The Taipei branch is its first overseas location, also offering a variety of desserts made with ingredients from Yotsuba Dairy in Hokkaido. Among them, the classic pancake is a Japanese-style pancake. In December, White Cosy launched a Christmas limited-edition matcha pancake using Yame matcha from Fukuoka Prefecture in Kyushu. Its characteristic is a smooth texture on the palate, combining sweetness and richness with a fragrant aroma.
