When it comes to New Year’s Eve meals, Taiwanese still emphasize grandeur and abundance in design—premium fish and meat must not only be carefully selected but also chosen from the finest options to create an exquisite and valuable New Year’s Eve (set meal) feast. After all, for most Taiwanese families, this New Year’s Eve meal represents reunion and welcoming the spring with joy. The feast marks the beginning of new hopes and is a good omen of luxury and abundance!

And for central and southern Taiwan families or corporations that especially love seafood banquets, their New Year’s Eve, year-end parties, or gatherings have gradually shifted from traditional Chinese New Year’s Eve dishes to those overseen by veteran Japanese chefs. This Japanese-style New Year’s Eve seafood set meal, centered around the essence of Japanese feasts, heralds victory at various important events or celebrations. Japanese cuisine often highlights deep-sea seafood, prides itself on delicate craftsmanship, and is especially benchmarked by freshness and ultimate deliciousness. 【Premium Wild Red Shrimp Snow Scene Assorted Sashimi】Serves 10

The first dish to arrive amazed everyone present, mainly due to the incredibly generous portion. First, there was a tail of “angel red shrimp,” with its ice-cool orange-red shrimp meat that was extraordinarily sweet. The “tuna” had a firm texture, refreshing and not greasy. The “sea bream belly” felt soft. The “salmon belly” was richly fragrant, oily, and tender. The “mackerel” was marinated in rice vinegar, offering a slightly sour and fragrant taste. The “squid” was cut into stripes for easier eating, and the beautifully colored sashimi on the round plate turned out to be “sea bream,” whose glossy meat grew sweeter the more you chewed.

【Chef’s Signature Grilled Nigiri Sushi】Serves 10

“Grilled conger eel,” “grilled flounder side,” and “grilled salmon belly” nigiri sushi featured distinctively defined vinegared rice grains. The pure white and sweet conger eel seemed to be brushed with a sauce made from soy sauce and mirin, fluffy and soft with a rich aftertaste. The flounder fin edge is one of the parts Taiwanese have recently grown fond of. Its snowy white, tender flesh was topped with sea urchin roe, adding layers of flavor. The grilled salmon belly had a semi-rare texture and was brushed with miso sauce, melting instantly with minimal chewing.

【Fresh Abalone with Mentaiko and Orange Vinegar】Serves 10

The dark brown abalone tasted of soy sauce fragrance, with its liver and gallbladder parts retained, offering a slightly bitter-sweet flavor. The salad mixed with mentaiko and orange vinegar provided a sweet and spicy contrast with crisp chilled vegetables, extremely refreshing.
