Juicy and chewy—hand-rolled dumpling wrappers at Tonghua Night Market’s cabbage and chive pork dumplings

Then you’ll see this dumpling shop

The reason we wanted to eat here was that Meiji saw the dumpling wrappers being made fresh on-site, which seemed promising. This place offers two flavors: cabbage pork dumplings and chive pork dumplings. There's only one type of soup—tomato and spicy sour soup—and you can also order side dishes. We ordered 10 of each type of dumpling along with a bowl of tomato and spicy sour soup.

A bowl packed with ingredients. The most unique part is that the soup isn’t thickened with starch—it has a light flavor, not particularly rich but still quite smooth. Paired with the ingredients, it feels quite healthy.

20 Dumplings (Chive Pork Dumplings NT$5 each, Cabbage Pork Dumplings NT$5 each). The handmade dumpling wrappers really do look different.

There are two types of chili sauce on the table. Lao K used the one on the left, which is pure chili and quite fragrant—it really enhances the dumplings. He didn’t use the chili oil on the right.

The dumpling wrappers are really chewy and elastic, and the aroma of the chives is very strong. The tasty wrappers paired with the juicy and sweet filling make for a delicious bite. The dumplings aren’t very big, so eating them one after another is super satisfying XD

The cabbage pork dumplings have a slightly stronger pork flavor because cabbage is naturally milder in taste. Lao K still found them quite good, but for friends who are more sensitive to meaty flavors like Meiji, he’d recommend the chive pork dumplings instead XD

Lao K’s Tip: After visiting Linjiang Night Market for so many years, this was the first time I tried dumplings that were actually delicious. The texture of handmade dumplings is just different, and the meat filling combination is also really well done. Next time you visit Tonghua Night Market, be sure to walk into this alley and give them a try.
