The renowned pork chop shop “Yaba Miso Pork Chops,” a must-try for travelers visiting Nagoya, Japan, has officially opened in Taipei’s Yongkang commercial district. Established in 1947, the shop is celebrating its 75th anniversary. To authentically replicate the flavors of Japan, Yaba’s secret miso sauce and the essential breadcrumb coating for the fried pork chops are both air-freighted from Japan. During the grand opening period, Japanese head chef Hirotoshi Chino will be stationed in-store to cook up signature Nagoya-style miso pork chops.
Yaba Miso Pork Chops uses rice cultivated in Taiwan, specifically the Koshihikari variety. The pork is carefully selected from premium local Taiwanese brands, ensuring high elasticity. The pork chops’ ideal accompaniment, cabbage, is freshly sliced daily. The breadcrumbs are imported from Japan and blended with both fresh and dried breadcrumbs to achieve a texture that is both tender and crispy. As for the miso sauce — the lifeblood of “Yaba Miso Pork Chops” — it is made from naturally brewed soybean miso aged for one and a half years. It is hand-prepared daily in limited quantities by skilled artisans, delivering a rich yet not overly heavy flavor.

In Nagoya, a single dish can be enjoyed in various ways to enhance its flavors. Yaba Miso Pork Chops recommends dipping the first two pork chops in their signature miso sauce, adding chopped green onions (for an extra NT$30) for the middle piece, and finishing with seasonings such as sesame and mustard. Signature dishes include teppanyaki miso tenderloin pork chops, teppanyaki miso tenderloin center-cut pork chops, and jumbo tenderloin pork chops (twice the size of the regular version). Other offerings include tenderloin skewers, loin meat skewers, signature extra-large tiger prawns, mixed seafood and meat tempura, Hokkaido scallops, and crab crepes. These items can also be ordered as set meals (including pickles, steamed rice, and miso soup) for an additional NT$80.
In terms of pricing, the most expensive items are the teppanyaki miso tenderloin pork chops and teppanyaki miso tenderloin center-cut pork chops, available as set meals for NT$420 or à la carte for NT$340. The mixed seafood and meat tempura is NT$340 à la carte, while the jumbo tenderloin pork chop is NT$320 à la carte or NT$400 as a set meal. Tenderloin and loin meat skewers (five pieces) are NT$260.
