Using the shrimp oil rendered from stir-frying fresh shrimp to cook the broth, and then leveraging the vermicelli’s ability to absorb the flavors, this dish achieves a well-balanced and consistent taste. Not only is it delicious, but it’s also low in calories — truly a recipe you shouldn’t miss.

Ingredients:
3 bundles of vermicelli (approx. 110g)
300g fresh shrimp
1 tsp minced scallions
1 tsp minced ginger
1 tsp minced garlic
Broth ingredients
1.5 tbsp oyster sauce
1 tbsp soy sauce
2/3 tbsp black vinegar
1.5 tbsp rice wine
A pinch of sugar
A pinch of white pepper
600ml water (or broth)

Instructions:
1. First, soak the vermicelli in water until softened, then set aside.

2. Heat oil in a pan, add the fresh shrimp, and stir-fry until about 5–6 minutes cooked and fragrant. Remove and set aside.

3. In the same pan, use the remaining oil to sauté the minced scallions, ginger, and garlic until aromatic.

4. Next, add all the broth ingredients to the pan and bring to a boil. Then add the soaked vermicelli from step 1 and simmer.

5. Once the vermicelli is soft, return the shrimp to the pan and cook until done. And you’re finished.

6. Plate the dish and sprinkle with a little cilantro according to your preference before serving.

Tips

1. Since shrimp cooks very quickly, be careful not to stir-fry them for too long in step 2 to avoid overcooking.
2. Vermicelli absorbs a lot of broth, so you can adjust the amount of water (or broth) to your liking. Also, eat it soon after cooking to prevent the broth from being fully absorbed by the noodles.
3. If using broth, remember to reduce the amount of soy sauce and oyster sauce to avoid making the dish too salty.
