Starting in March, Evergreen Phoenix Hotel (Jiaoxi) will introduce monthly themed hotpot dishes at its "Smoke & Wave Pavilion." The first series, "Liangzhu Pot Hotpot," features "Taiwan’s Certified Quality Pigs" as the main ingredients for hotpot. The selection includes four renowned Taiwanese pork breeds: Taiwan Seaweed Pig, Pingtung Barley Pig, Hualien Lees Pig, and Yunlin Pine-Scented Pig. The broth options include red, white, or a dual-flavor hotpot.
The white broth of "Liangzhu Pot Hotpot" is a medicinal pork bone soup, simmered for 10 hours with pork ribs, old hen, pork leg bones, pork forelegs, and several warming herbs. The red broth is a signature lychee chili oil hotpot. Its spicy base follows an ancient Chongqing recipe, enhanced with a lychee flavor created by stir-frying with rice wine—adding depth to the heat without overpowering it.
The four premium Taiwanese pork breeds used in Liangzhu Pot Hotpot — Seaweed Pig, Pingtung Barley Pig, Hualien Lees Pig, and Yunlin Pine-Scented Pig — are all sliced into appropriately thick cuts for hotpot dining. Taiwan Seaweed Pig is raised on natural brown seaweed from Siyu Island in Penghu; Pingtung Barley Pig is a premium-bred variety fed exclusively on barley; Hualien Lees Pig comes from Xincheng Township in Hualien and is raised on lees from a local rice wine brewery; Yunlin Pine-Scented Pig, known as Taiwan’s "dream pig," benefits from a nutrient-rich start in drug-free, healthy sows and begins consuming naturally fermented enzymes from just 30 days old.
