Creamy QQ Cabbage is one dish I never miss when I go to a Hong Kong–style dim sum restaurant. I love how creamy and milky it is, with a thick white sauce coating the cabbage, giving it that slightly hot-off-the-grill mouthfeel. Just thinking about it makes me hungry—let’s get started quickly!!
Ingredients
½ head of Chinese cabbage
30g butter
2 tablespoons all-purpose flour
300ml fresh milk
3–4 dried shiitake mushrooms (soaked)
A small amount of dried shrimp
1 teaspoon minced garlic
1 teaspoon bonito flakes
Salt to taste
Sugar to taste
Grated cheese to taste
Method
1. First, prepare the white sauce. Melt the butter over low heat, then stir in the flour.

2. Next, add the milk and cook until it thickens into a paste. Season with a little salt, then remove from heat and set aside. (You can also add a pinch of black pepper if you like.)

3. In another pan, sauté the minced garlic until fragrant, then add the mushrooms and dried shrimp and stir-fry until aromatic.

4. Add the Chinese cabbage and stir-fry until it releases some water.

5. Pour in the mushroom-soaking liquid and white sauce, then simmer. Once the liquid has reduced a bit, season with salt, sugar, and bonito flakes to taste.

6. Finally, transfer the cabbage to a baking dish, sprinkle with grated cheese, and bake in the oven at 200°C until the surface turns golden brown. Done and delicious.

Tips
1. For a softer texture, you can simmer a little longer during Step 5—the cabbage will become more tender and melt-in-your-mouth.
2. Use standard mozzarella or pizza-style grated cheese for the topping.
