The Japanese restaurant at Meifu Hotel, Seisan, will open its tableside kappo service on April 2, priced at NT$3,800 per person.

Although Meifu Hotel began trial operations on January 9, currently only the first-floor Cafe Harmony buffet, Chaoyuefeng restaurant, and the second-floor Taiwanese cuisine restaurant Mi Xiang are open. Meifu Hotel’s Seisan centers around Japanese cuisine, utilizing a variety of cooking techniques to present fresh ingredients in different forms. It includes tableside kappo, sushi kappo, charcoal kappo, and teppanyaki kappo. Currently, the tableside kappo is the first to open, with other themed kappo services to follow. The next likely to open are the charcoal kappo and sushi kappo, while the teppanyaki kappo will probably be the last. Pricing varies by theme but is generally offered as a set course.

The tableside kappo menu at Seisan is designed by Executive Chef Chen Yuhong, featuring seafood in 80% of the dishes. Taiwanese vegetables are paired with imported Japanese seafood, with the set course consisting of 9–13 dishes including appetizers, grilled items, simmered dishes, and roasted items. Cooking methods incorporate techniques from both sushi kappo and charcoal kappo.

Additionally, Seisan has an SSI-certified international sake sommelier. Upon request, they can recommend suitable Japanese pairing wines. Sommelier Koharu noted that Seisan currently offers over 30 types of sake, and with shochu included, the total reaches over 40 varieties. Japanese beer, fruit wine, and sparkling wine are also available. Beyond dining pairings, Seisan also has a sake bar where guests can enjoy a drink after their meal.
