Yan Shi Hand-Shaved Noodles is a snack shop that everyone in my family (except me) absolutely loves. Whenever Mom doesn’t feel like cooking and we’re all unsure about what to eat, at least one person will suggest Yan Shi—it’s like an addictive obsession, truly terrifyingly popular.

Yan Shi is located on Fu’an Road in Tianzhong Town, right in front of Tianzhong Train Station. If you exit the station, make a right turn and walk straight for about 300 meters—the shop will be on your left.

Mom says Yan Shi originally operated on Zhongzhou Road, next to Chunghwa Telecom, but later moved here. It has been in business for over 40 years and is now in its second generation of management.

The shop has about 4–5 indoor seating spots, plus roughly 2 more seats under the covered porch outside. We visited around 4 PM on a weekday, and to our surprise, the place was already packed.

Aside from noodle dishes, the shop also offers a variety of small plates featuring pork offal—all meticulously cleaned, whether it’s pig ears, pig skin, or pig tongue.

The lady boss handles the preparation of the side dishes—she’s quite friendly, too. ^^

The boss man is in charge of cooking the noodles.

▲ Lean meat.

This is actually pork cheek.

▲ Crispy intestines.

Know what crispy intestines are? Apparently, they’re made from the developing uterus of a pig.

▲ Pig ears.

Different side dishes come with unique seasonings and accompaniments—you can really tell the care the shop puts into them. The flavors aren’t monotonous at all; though they’re bold, they’re not greasy, and have a lovely tender-chewy texture.

This is the shop’s homemade chili sauce. My brother says it’s spicy but delicious—I didn’t dare add any. He mentioned my younger brother always adds a big spoonful. ><"

▲ Dan Zai Noodles (Taiwanese-style small bowl noodles).

These use thin noodles, along with chopped leeks, bean sprouts, slightly larger meat sauce chunks, and crispy fried shallots.

You can also add meatballs—the meatballs are bouncy and springy.

This is what Mom ordered. She said it’s chewy yet slippery-smooth...

Actually, the flavor is quite simple—it has an old-school taste. The broth is simmered for four hours with big bones, giving off a rich, sweet, and refreshing bone essence.

▲ Dry noodles.

On another visit, I noticed many other tables ordering dry noodles, so I gave them a try. Surprisingly, they were delicious—aromatic, soft yet firm, and I almost couldn’t finish a single bowl. XD

▲ Meatball soup.

That day, a customer asked for fish ball soup, but the boss said they no longer serve it because the fish ball maker stopped making them. Instead, they now use meatballs from another place. I thought the meatballs were good, but Mom said the old fish balls were better.

The first time I tried it, I thought it was pretty standard—but my family adores it. They said the first time they had it, after just one sip of the broth, both my brother and I looked up at each other simultaneously, thinking, “Wow, this broth is so classic!” It’s rare to find a broth that’s not cloying or thirst-inducing. Now whenever the family suggests going there, I’m totally fine with it. Their hours are also unique—they’re open from around 3 PM until they sell out, and they’re closed on Sundays. Interested folks should definitely give it a try. ^^
