Similar to OMAYA Chuncheon Fried Chicken, the shop grills what is known in Korea as “seagull meat”—pork diaphragm, equivalent to Taiwan’s liver connective tissue—on an iron plate. Its chewy texture wins praise from many diners. The outer rim of the iron plate is sprinkled with kimchi, and the chef adds egg, which cooks into a border egg via the high heat in the center. Additionally, the orange-hued grilled pork skin is a popular side dish—chewy, mildly spicy, and rich in collagen, making it addictive.
