Huashan 1914 Creative Park’s most captivating castle restaurant, Déjà Vu, is romantically designed with a lavish Baroque-style manor ambiance. After launching an exclusive chef-designed international Christmas feast last Christmas and hosting an exhibition of works by top French artist Stéphane Gautier in Taiwan, this fusion cuisine paired with visual art has become a new aesthetic hotspot in Taipei. In March 2015, Déjà Vu further invited the guardian of Italian cuisine — Executive Chef Michlle Tomadin from the “Le Cordon Bleu” academy — to showcase his skills in Taiwan, introducing a limited-time chef’s tasting menu and a curated selection of fine Italian white wine gift boxes, allowing food lovers to experience authentic Italian flavors and wine pairing without traveling to Italy.

Michlle Tomadin, current Executive Chef of the world-renowned Le Cordon Bleu academy — the cradle of Italian cuisine — was born in Bologna, the heartland of gastronomy. With numerous awards and a global culinary footprint across top-tier hotels and restaurants, he is dedicated to sharing the essence and beauty of Italian cuisine with the world. The Michlle Tomadin chef’s tasting menu begins with a sweet note from Spain’s Baco Diana Winery’s “Ninfas Bianco,” exuding rich aromas of peach and pear. The appetizer features a refreshing start with mini purses filled with Italian salami, Spanish chorizo, and Parma ham, easing diners into the world of authentic Italian fare. The first course, “Botan Shrimp Tartare with Celery and Green Apple,” uses premium botan shrimp imported from Hokkaido to make the tartare, paired with fresh celery and green apple. The exceptionally fresh shrimp, cured in premium Ligurian olive oil, perfectly highlights the sweet richness of the shrimp.
