Andrew changed the original Portuguese method of mixing flour and water by replacing it with fresh cream, adjusted the filling to a buttery egg mixture, and reduced the sugar content, blending British and Portuguese flavors. The crust is flaky and fragrant, and the creamy filling melts in your mouth. After its launch, it became hugely popular, captivating all of Asia and becoming a signature dessert of Macau.

Margaret’s Café e Nata in Macau
Margaret’s Café e Nata is the most famous Portuguese egg tart shop on Macau Island. Located in the city center and easy to get to, many tourists make a special trip here to buy a few boxes before leaving Macau. Portuguese egg tarts originated from a monastery in Lisbon, Portugal, and were brought to Macau, where they were modified by Mr. Andrew, the pastry chef at Grand Hyatt Macau, becoming the most popular snack in Macau. Ms. Margaret is Andrew’s ex-wife, and after their divorce, she opened this egg tart shop in Nam Van, competing with Andrew’s Bakery in Coloane. Margaret’s egg tarts once made a craze in Taiwan about ten years ago, causing a frenzy of long queues and mad rushes to buy them.

Lord Stow’s Bakery
In 1989, British Mr. Andrew (Andrew Stow) founded Lord Stow’s Bakery. The Portuguese egg tarts he modified use a British-style custard filling, which tastes particularly rich. He also reduced the amount of caramel used and added a crispy crust—truly delicious. Many people, regardless of the high calorie risk, often take away half a dozen or even a full dozen. Since Mr. Andrew passed away a few years ago, his sister now runs the shop. Originally, she had opened a small café around the corner, and in 2008, she opened Andrew’s Garden Café on Rua da Tercena. Golden Boat’s method retains the traditional Portuguese style, using a lot of milk and fresh cream to make the filling, which tastes more like cheese and is also sweeter. Perhaps because of its authentic taste, Golden Boat is full of Portuguese customers, and the shop also sells many Portuguese snacks and pastries, such as fried dough twists, shrimp puffs, and meringue pudding. The custard in Golden Boat’s egg tarts is not as rich as the famous Andrew’s, and the crust is crisp and slightly hard, but you can taste the most traditional Portuguese flavor.
