Maple leaf tempura is a specialty delicacy of Minoo, Osaka. It’s said to have a history of a thousand years in the area and is a very common market snack. It may look simple, but the preparation method is no easy feat. After washing the maple leaves, vendors must control a specific level of humidity and temperature, and pickle them with salt for a year. Once matured, the pickled leaves are coated in a batter made of flour, sesame, and powdered sugar, then deep-fried.
