The 520 presidential inauguration ceremony is just around the corner, and the state banquet menu for the day has always been a major focus of attention. This time, Taipei Marriott Hotel has been selected for the first time as the venue for the state banquet. A team of four head chefs and over 120 chefs created eight dishes full of Taiwanese flavor, inspired by the two core concepts of “local” and “in-season,” using Taiwan’s seasonal premium ingredients to win over the palates of domestic and international guests.

The most popular dish is this “Roasted Happy Pig.” The pork used comes from the Yunlin Happy Pigs that the new president, Tsai Ing-wen, once personally fed. Though it looks like a Western-style dish, the inspiration for the cooking comes from Taiwan’s iconic snack, “lu rou fan” (braised pork rice). Through elaborate cooking procedures and a creative blend of Eastern and Western techniques, it offers a unique taste of Taiwan.
