Is this a pancake? The Dutch baby at this café is actually bigger than a mixing bowl.

The Dutch baby at DAZE Coffee in Yuanlin City, Changhua County, is quite different from those commonly found in the market. About 8 inches in size and shaped like a large bowl, it is filled with fruit compote, condensed milk, and vanilla ice cream. Currently available flavors of this Dutch baby include banana chocolate, mixed fruits, and matcha red bean, priced between NT$210 and NT$230.

Xiaohong, the owner of DAZE Coffee, said that when brainstorming dessert ideas for the café, she noticed that most cafés offered either American or Belgian pancakes. She wanted something different. Having tried Dutch babies during her working holiday in Australia, she ultimately decided to make them the café’s signature dessert.

Xiaohong explained that the Dutch baby is made using an 8-inch cast iron pan, with ingredients including eggs, flour, and milk. It takes about 15–20 minutes to prepare and is made to order. When the café is busy, customers may wait 20–25 minutes. Aside from banana chocolate, mixed fruits, and matcha red bean, there was also a strawberry condensed milk flavor available in winter. Mango flavor is being considered for the future.

Besides the Dutch baby, the café also offers other desserts such as cheesecake, tiramisu, savory pies, and fruit pies—all handmade, Xiaohong emphasized.
