Tseng Ban Mian, created by Show Lo, is the trailblazer of the dry noodle trend. Show Lo revamped the wavy shape of Guanmiao noodles, using handmade sun-dried noodles that are chewy yet fully absorb the sauce. When it comes to dry noodles, the sauce is absolutely the soul—his version uses naturally fermented black bean paste paired with four types of peppers led by Sichuan Huajiao (prickly ash), delivering a richly numbing and savory flavor that’s guaranteed to be addictive.

2.Jia Yishi Ri
Jia Yishi Ri, a brand newly launched by actress Ada Choi and her younger brother Jia Zichen, continues the proud taste of their father’s 1980s-era Tianjin cuisine. It offers high-end twisty noodles, combining white sesame paste, Sichuan Dahuapao prickly ash oil, and hand-pulled thin noodles to create the perfect flavor blend, all wrapped in a stylish, artistic package that reflects the brand’s identity.

3.Congcong Huigan Mian
Congcong Huigan Mian was founded by Gary Chaw’s wife, Wu Suling, and even earned second place in the Asian division of the Le Cordon Bleu Dry Noodle Awards. Its star ingredient is Dahuapao pepper combined with chili and fried red onion oil, perfectly balanced for aroma, numbness, and spiciness. Paired with sun-dried, hand-pulled Guanmiao thin noodles, it’s a must-try spicy dry noodle dish.

4.Fu Zhong Jiayuan Sauce Noodles
Producers Wang Weizhong and his sister Wang Rongrong joined forces to establish the brand “Fu Zhong Hao Zi,” promoting military dependents’ village cuisine with the family’s unique touch. Last year, they also launched a series of Jiayuan Sauce Noodles. Fu Zhong Jiayuan Sauce Noodles come in three flavor varieties: vinegar-scented numbing pepper, garlic sesame paste, and basil-flavored savory. It’s said that mixing two sauces together and tossing them with dry noodles creates unexpectedly delicious results.
