Kumamoto Aso Men’s Café: Motorcycles, Coffee, and Handcrafted Romance

In Aso, there is a men’s-style food workshop called“Hibari Workshop” (ひばり工房)which was originally established about forty years ago as a ham production studio by the Aso Agricultural High School to train food processing assistants. This small workshop has always upheld the philosophy of “delicious handmade food,” and from the very beginning, it has stuck to a production policy of “limited quantities” and “handmade” small-batch items.

At Hibari Workshop, they use locally sourced pork from Aso, combined with local spices and the region’s prized groundwater, to produce batches of mouthwatering hams and sausages. The hams and sausages they make not only effectively highlight the sweetness, chewiness, and texture of the pork but have even won the SUFFA Gold Award in German meat processing.

In another corner of Hibari Workshop is a café brimming with masculinity, featuring simple, understated color schemes. There’s a fireplace, an armchair, a cup of rich coffee, and a ham hot dog from Hibari Workshop. Gazing out at the endless rice fields and the distant Mount Aso, the romance of manhood is expressed in this perfect balance.

Of course, to match the men’s vibe, a garage filled with things men love—“cars,” “motorcycles,” and “pets”—is essential. Between the ham workshop and the café, Hibari Garage houses all kinds of motorcycles, parts, and related books, making it a popular gathering spot for the men of Aso.

The first time you visit Hibari Workshop, your eyes will be drawn to the architecture of the Hibari Café. After all, it takes some skill to subtly yet precisely showcase taste amidst a field of rice paddies. Sitting in the front courtyard of Hibari Café, you might find yourself thinking, “How wonderful it would be if a men’s café like this existed back home in Yilan.”
