The pink rolled ice cream is super dreamy—a specialty "Thai-style stir-fried ice" shop hidden in Taipei’s alleys

The Thai-style stir-fried ice specialty shop "ice Paris"The owner is actually French chef Yohann Charreyre, who noted that Thai-style stir-fried ice actually originated in Taiwan before gaining popularity in Thailand and becoming beloved in Western countries. But during his two years in Taiwan, he found very few shops selling it, so he partnered with two friends to open a Thai-style stir-fried ice shop to help Taiwanese better understand this dessert.

One of the owners, Daniel, said the shop currently offers 11 flavors of Thai-style stir-fried ice, but the menu is adjusted from time to time based on customer feedback. The shop also prepares decorations like bear cookies, Oreos, and marshmallows, with about seven topping options for each flavor, some of which also include fruit for garnish.

What’s the trick to making stir-fried ice? Daniel explained that since the ice-making platform is around -17°C, you have to continuously stir-fry with both hands holding the spatula to incorporate air into the butter, preventing the ingredients from freezing too quickly due to the platform’s temperature. Each serving requires about 100 to 200 stirs on average. Once the ingredients and butter are well blended, the mixture is flattened with the spatula and finally rolled into an ice cream curl. Since each order is made fresh, it takes about three to five minutes to prepare.

Tasting the "Mixed Berries" flavor, the ice cream really isn’t overly sweet and is also refreshing. Because strawberries and berries are added during the process, you can also taste their sweet-and-sour flavor and the unique aroma of the berries. The shop also adds individual berries and bear cookies as decoration, which taste great even when eaten on their own.

Compared to Mixed Berries, the "Black Forest" flavor is richer. During preparation, chocolate shards are scraped from a chocolate bar, and you can taste small bits of chocolate in the final product. But it’s still moderately sweet, paired with Oreo cookie decorations, making it perfect for chocolate lovers. Daniel noted that they will soon launch a Golden Sand Chocolate flavor, which involves stir-frying whole Golden Sand chocolates with the butter, giving it a distinct peanut texture and a hint of chocolate flavor. It will also be drizzled with a special chocolate sauce—much anticipated.
