Homemade Dishes from a Man’s Kitchen: Q-textured and Flavorful “Peanut Braised Pig’s Trotters”

Pig’s trotters are both delicious and rich in collagen, but getting them soft and tender usually takes a lot of time. Today, using the Lagostina Lastra Quick Pot, we’ll show you how to cook tender yet Q-textured pig’s trotters with just a few simple steps. Come along with us and see how it’s done.

Ingredients

2 pig’s trotters (approx. 8 Taiwan catties)
300g peanuts
2 scallions
6 slices ginger
4 garlic cloves
6 star anise
6 small pieces cassia bark
1500ml water
450ml soy sauce
5 tbsp rock sugar
150ml rice wine

Instructions

1. First, blanch the pig’s trotters in boiling water.

2. Then rinse them with clean water and scrape off any dirt on the skin before setting aside.

3. Next, add a little oil to the Lagostina Lastra Quick Pot, sauté the star anise and cassia bark until fragrant, then add the scallions, ginger, and garlic and stir-fry until aromatic. Cook everything directly in the pot.

4. Boil the peanuts in hot water for about 10 minutes, drain, and add them to the pot along with the pig’s trotters and seasonings.

5. Turn the heat to high and bring the sauce in the pot to a boil.

6. Once the sauce boils, cover the pot. When the safety indicator rises and you hear hissing and see steam, switch to low heat. After one hour, when the pressure is released, it’s ready to uncover. (The gradual pressure release design of the safety valve controls the speed and intensity of pressure discharge; once released, you can open the lid.) Tips

1. If you prefer a more pronounced caramel color, you can first fry the rock sugar until it turns amber before adding it to the pot.
