A pizza shop in Chiayi has introduced a “stir-fry pizza,” blending the distinctive flavors of stir-fry eateries and rolling out limited-time seasonal flavors. Stir-fried dishes such as three-cup king oyster mushrooms and Kung Pao chicken are topped on the pizza, with the crispy crust complementing the mildly spicy stir-fried taste—ideal when paired with beer.

“Hand in the Pub” is a well-known bar in Chiayi operated under the “Hand in Pizza” brand. The venue offers a variety of beers and centers around the concept of “selling pizza in a bar-style setting,” operating only in the evenings. Owner Lee Tsung-yang serves a range of pizzas, snacks, salads, and soups, but the standout is the “stir-fry pizza” that fuses stir-fry flavors.
Instead of traditional tomato sauce or cheese bases, the pizza uses a soy-based topping with fillings typically found in stir-fry shops. During the visit, the reporter tried the popular stir-fry dish “three-cup king oyster mushrooms.” The 12-inch pizza is hand-kneaded on-site with an American-style thin and crispy crust. The three-cup king oyster mushrooms are stir-fried quickly just like in a stir-fry restaurant—onions, basil, sugar, and soy sauce are sautéed rapidly before being layered on the crust.

Lee Tsung-yang explained that making “stir-fry pizza” requires extra attention to ensure the stir-fried ingredients have more sauce than usual, preventing them from drying out during baking. This uniquely Taiwanese “three-cup king oyster mushroom pizza” combines a savory flavor with pizza in a way that surprisingly pairs even better than poured-over rice sauce. The chewy king oyster mushrooms on top retain their original freshness, which is unexpectedly delightful.
The “stir-fry pizza,” perfected after multiple attempts, changes with the seasons. In addition to three-cup king oyster mushrooms, other flavors like stir-fried pork with scallions and Kung Pao chicken will also be introduced. It redefines the traditional pizza-eating experience by merging Taiwanese flavors with innovative concepts. Travelers visiting Chiayi should definitely give it a try.
