Located near the Taichung Fine Arts Museum, theFishbone Egg Wafflesshop is a popular local afternoon tea spot.The store is built around a Vespa, and its retro design is highly eye-catching.Although it’s officially open for only three hours a day, all ingredients are freshly made daily, so the shop often closes early once the waffles sell out — leaving many customers who come from afar disappointed.
As for what makes these egg waffles special, owner Mr. Wu explained that they use organic red-heart eggs, which have more egg content than others, allowing the waffles to achieve greater fluffiness and better support the flour — resulting in a softer yet firmer texture overall. For the sauce, no water is added; instead, they make a custard sauce with pure milk and use imported butter, giving the waffles an extra-rich milky flavor. Even though this raises production costs, Mr. Wu remains committed to quality — because he believes you should only share what you yourself enjoy eating. With this philosophy, he serves up warm and comforting flavors to every customer.But sometimes there may be leftovers if not all waffles are sold. In that case, the remaining ingredients are used to make more waffles, which are then donated to orphanages so that the children there can also enjoy the sweet taste of egg waffles.

Mr. Wu hails fromYuchi Townshipin Nantou, which is why he chose the homophonic name “Fishbone” as his shop’s name — as a nod to his hometown. He chose egg waffles as his signature item not only because they remind him of the happiness he felt as a middle school student eating egg waffles at Yuchi Night Market from an elderly vendor, but also because he wants to start with a simple, everyday food. In today’s fast-developing society, he aims to showcase the resilience of kids from rural areas — using the simplest ingredients to offer people the richest taste experiences. The Vespa cart design stems from Mr. Wu’s love for vintage car culture, which he combined with his passion for egg waffles. The irreplaceable old-school flavors symbolize his undying enthusiasm for the things he loves. Starting with the idea ofsharing, he conveys his heartfelt message to every visitor,letting people know that Yuchi Township’s specialties aren’t just oolong tea — there’s also this heartfelt “egg waffle.”

Currently, “Fishbone Egg Waffles” offers six different flavors, includingPlain, chocolate, cheese, matcha, custard, black tea— from the classic plain flavor to the girl-favorite matcha, offering various innovative flavors. Even the specialty black tea from “Yuchi Township” has been turned into egg cake, which is quite unique. Recently, the shop introduced a limited-edition “Green Monster” flavor with a matcha crust and red bean filling, creating a huge craze. Although it’s not available regularly yet, Owner Wu mentioned that they will continue to innovate more in the future, showcasing the endless possibilities of “egg cake.” This commitment from their hometown will also touch the hearts of everyone through these egg cakes.
