When it comes to Japanese cuisine, dishes like sashimi, sushi, and ramen are already widely known. But if you’re looking for an absolute must-try delicacy in Japan, nothing beats wagyu beef. Kobe beef, hailed as the “Rolls-Royce” of wagyu, is arguably the most unforgettable gourmet experience for every visitor to Japan.

As a specialty of Japan, Kobe beef boasts a rich yet non-greasy taste that melts in your mouth, leaving an impression that lasts long after the first bite. The most important aspect of Kobe beef is its lineage. Unlike other premium brands like Matsusaka or Omi beef, which source calves from various regions, Kobe beef strictly uses calves born mainly in Japan’s Kyushu and Chugoku regions and raised under rigorous standards. Only cattle authenticated by Japan’s sole authority on “purebred” wagyu can be certified as Kobe beef. Tajima in Hyogo Prefecture is the top-grade origin of wagyu, specializing in raising these premium cattle. Calves born here are issued a Calf Registration Certificate by the National Wagyu Registry Association, detailing their lineage and marked with a nose print.
The famously premium “filet steak” comes from the most tender part of the cow, with only two such cuts yielded per animal, each weighing about 2–3 kg. In 2013, the total Kobe beef production was 4,679 head of cattle, yet the global supply of filet steaks was only 9,000 pieces. Due to its rarity, many gourmets travel from around the world just to savor this precious Kobe beef filet. Among the popular restaurants beloved by foodies is Kagura, the teppanyaki restaurant at Osaka’s Imperial Hotel.
The Osaka Imperial Hotel holds 2% of the global supply of Kobe beef filet steaks. Chef Kano of Kagura has over 10 years of experience preparing filet steak, showcasing its most authentic and exquisite flavor through his masterful techniques. The open-style teppanyaki setup allows guests to chat with the chef while watching the cooking process unfold. Not only is the taste exceptional, but all five senses are indulged, offering an unforgettable dining experience. Japan’s finest cuisine begins here.
