Although Taiwanese cuisine is gradually declining in popularity, the understated yet luxurious Asha cuisine and banquet dishes featuring imported ingredients and dried goods remain beloved by food connoisseurs. Fresh Perch with Five-Shredded Sauce originates from a classic dish of southern Taiwan, originally featuring milkfish as the main ingredient. Due to the numerous bones in milkfish, it has been replaced with a one-and-a-half-pound fresh perch. The fish is directly deep-fried until crispy on the outside and tender inside, then topped with a savory sauce made from five shredded ingredients—shiitake mushrooms, carrots, black fungus, bamboo shoots, and daylilies—collectively known as the “Five-Shredded” sauce. The highlight is the crispy exterior and tender interior of the fish, along with the sweet-and-sour flavor of the Five-Shredded sauce.
