I have a few Hong Kong friends who really love Taiwanese waffles — crispy on the outside, soft on the inside, with an irresistible aroma and syrup combo. But Hong Kong has a similar dessert called “egg waffles,” which also became quite trendy in Taiwan two or three years ago. Now, egg waffles have almost become one of the must-try night market foods in Taiwan, just like these popular ones from 【Kong Bao Dan Hong Kong Egg Waffles】 at Ruifeng Night Market.
But now you don’t have to go all the way to Ruifeng in Kaohsiung to get them — apparently, they’re also available at Dadao Night Market in Tainan and Fengjia Night Market in Taichung. I’ve had egg waffles before, but since a local friend highly recommended them, I figured I’d grab some to try.
(Ruifeng Night Market is only open Tuesdays, Thursdays, Fridays, Saturdays, and Sundays from 6:00 PM to 1:00 AM — don’t go at the wrong time!) This 【Kong Bao Dan Hong Kong Egg Waffles】 is one of the more popular stalls at Ruifeng. I waited quite a while just to catch a moment when they weren’t swamped so I could take some photos. The stall has three griddles laid out, much like those used for baking pancakes. Back when Taiwanese-style crepes were all the rage, the setup was pretty similar. There’s just one person running the stall — taking orders, handling money, and manning all three griddles. It gets pretty hectic when there are lots of customers.


Most orders are made fresh to order, so there’s a bit of a wait after placing your order — about five to seven minutes. Ruifeng Night Market is still one of the most popular night markets in Kaohsiung, so it’s totally normal that many stalls have wait times. They offer seven different flavors, priced between NT$45 and NT$55. I got one of each of the original and chocolate flavors to try.


This kind of sweet treat is perfect for eating while strolling around the night market — no messy hands or greasy splatters. They also sell “silk stocking milk tea” made with Carnation milk, but I was too full that day to order one.

I didn’t take separate photos because I only realized afterward that the only difference is the slight variation in outer color — otherwise, they look almost identical. Be careful when pulling them out of the paper bag, as they’re super crispy and might break and fall apart (like mine did). Unlike the egg waffles I’ve had before, which were soft, chewy, and fluffy, these are baked until very crispy. The outer shell is thin and crisp, with a moist, slightly chewy inside. The interior is genuinely quite “hollow,” which is why they’re fittingly named “Kong Bao Dan” (Empty Pack Egg). But the batter flavor is really quite good — the original has a nice eggy, milky aroma, and while the chocolate flavor isn’t as bitter-sweet as the menu suggests,

the chew still gives off a fairly rich chocolate taste. It’s actually really delicious. The portion size is decent too. After eating, I felt like I should probably try their silk stocking milk tea next time. If it’s made with that strong Hong Kong-style tea flavor, it would probably be great.

Either way, night markets offer so many choices — you can sample all kinds of snacks and drinks to figure out what you like best, and then recommend your favorites to friends. But yeah, these egg waffles are seriously tasty.
