The grilled king oyster mushrooms with scallops use the country’s most beloved scallops, combined with sliced, juicy king oyster mushrooms. High-heat grilling locks in their natural sweetness while preserving a bouncy texture. The French-imported mussels, which have only a three-day shelf life, were air-freighted to Taiwan just one day before the awards ceremony to ensure ultimate freshness. They are cooked to highlight their original flavors. For dessert, the French-style rose apple tart showcases the chef’s exquisite knife skills—Fuji apples are thinly sliced and rolled into rose-like petals, dusted with powdered sugar to add an elegant touch to the backstage atmosphere.
