Taiwan’s popular ice cream shop Swirls continues to make waves, and after recently teaming up with 7-ELEVEN to launch an egg roll ice gift set, this summer in 2018 it will collaborate with century-old traditional pastry powerhouse Kuo Chen Nan to create Taiwan’s most dreamy “Mung Bean i* Snow Cake,” which will be sold in limited quantities at two Swirls locations in Tainan during the Dragon Boat Festival holiday.

To perfectly combine traditional pastries with ice cream, the business and master pastry chefs spent over six months repeatedly testing and insisting on the finest presentation of ingredients, ultimately crafting the Mung Bean i* Snow Cake by combining handmade traditional pastry with ice cream.

The ice cream filling uses Kuo Chen Nan’s signature Mung Bean i* to create a fluffy, smooth, fragrant mung bean paste. The whole Mung Bean i* is thoroughly kneaded into fresh local Tiger Mountain milk from Tainan, with the addition of hand-stir-fried red-clay cured salted egg yolk and Bacardi rum. The savory richness of the egg yolk and the sweet aroma of the rum perfectly complement the mung bean filling, adding different layers of flavor to the originally fresh and delicate taste.
