Sembayashi
Sembayashi serves seasonal cuisine unique to Iwate Prefecture — the Nanbu Hotto Nabe (Nanbu Hatto Nabe), presented on exquisitely varied serving plates. The dish is packed with seafood from the Sanriku region, fresh green vegetables, and specially made noodles, all in a traditional Nanbu iron pot. Not only does the pot retain heat exceptionally well, but it also enriches the dish with iron. The broth, simmered with a variety of ingredients, is both delicious and nutritious, and the seafood is tender and succulent. The hotto (hatto), similar to udon, has just the right springy texture, making for an absolutely delightful taste that lingers in memory. Other à la carte dishes such as unagi kabayaki and fried oysters are also highly recommended.
