Heaven::Horse Meat Cuisine
Horse meat cuisine is a famous delicacy in Kumamoto, and Heaven, a specialty horse meat restaurant in operation for 26 years, was opened with passion for sharing its true flavors. The first-generation owner, originally an office worker, loved eating horse meat and wanted others to experience its genuine taste, which inspired him to start the restaurant. The horse meat used at Heaven is supplied under contract with six farms across Kumamoto Prefecture to ensure the freshest and most delicious meat is always available. According to locals, once you’ve tried Heaven’s horse meat dishes, you won’t want to eat it anywhere else—proof of its exceptional quality. To allow diners to enjoy the purest flavor, the horse sashimi is served atop just a small amount of rice, and the top-quality cut used—“san-mai niku” or three-layer belly—is taken from only 7–8 kilograms of meat yielded from a 400–500 kilogram horse.
