Cantonese people love to enjoy a pot of hot tea with dim sum between 11 AM and 3 PM, a tradition known as “Cantonese-style dim sum dining.” Among the dim sum offerings at Ocean View Pavilion, the “Shrimp Dumpling King” is the most famous. While shrimp dumplings at other restaurants tend to be smaller, the ones here feature an ultra-thin wrapper that becomes transparent and silky after steaming, revealing the plump shrimp filling inside. Many guests who have tried shrimp dumplings elsewhere say these are truly the best—earning the title “King of Shrimp Dumplings” is no exaggeration. Chef Zhang has recently developed a “Three-Color Shrimp Dumpling King,” using carrot, spinach, and other natural ingredients to create three differently colored wrappers. The dish is delightful both in texture and color.
Additionally, the “Fish Maw and Shiitake Shrimp Cheong Fun” features smooth and bouncy cheong fun filled with shiitake mushrooms and fresh shrimp, offering a refreshing taste. The “Mud Crab and Scallop Congee” is made using mud crabs caught at the boundary of the South China Sea. Thanks to their sweet and flavorful meat, the broth is exceptionally rich, and the crab meat dances delicately in the white congee, delivering unparalleled taste. Another must-try dish is the “Golden Crispy Roast Pork,” which is marinated overnight in sea salt before being roasted with five-spice powder and garlic powder. The secret to its deliciousness lies in scraping off the charred bits during cooking, resulting in a savory flavor with a hint of salty aroma.
Another renowned dish is the “Jade and Jadeite Grouper Ball,” where chunks of grouper meat from the deep sea are stir-fried with asparagus, carrots, ham, and sweet peas. Tapioca starch, chicken powder, and egg white are used to ensure the meat remains tender.
