One of the hottest keywords on the internet in 2016 was undoubtedly “rainbow” and “gradient.” From drinks and cakes to all kinds of scenic installations, everything jumped on this trend. Joanne Lee Cake Design, which opened in early March, created a wave of Instagram-worthy hype with its ultra-dreamy and sweet rainbow pancakes.

Located in Taipei’s Dongcheng district, Joanne Lee Cake Design is actually a fairly well-known fondant cake shop that occasionally holds dessert-making classes, allowing fondant enthusiasts to try their hand at making their own. The owner who invented the rainbow pancakes is originally a Master’s graduate in management from Northwestern University. She was inspired by a TV show to pursue her dream of baking and thus went to Le Cordon Bleu in France to study pastry.

The ultra-dreamy rainbow pancakes are made up of five differently colored American-style pancakes stacked together, drizzled with rich strawberry whipped cream sauce, served with a large scoop of strawberry ice cream, and topped with honey for added layers of flavor. Taking a bite of the hot pancakes and cold strawberry ice cream, the contrast between temperatures bursts in your mouth, definitely leaving a deep impression.
