The fried gluten soaked with rich gravy, paired with vegetables of various textures, is perfect whether served hot or cold.

Ingredients:
Fried gluten (or bean curd rolls) 200g
Edamame a small amount
Carrot 20g
Sliced bamboo shoots half a bowl
Star anise 3 pieces
Black fungus 2 pieces
Shiitake mushrooms 10 pieces

Sauce:
Boiling water 1 rice cup
Sesame oil a small amount
Soy sauce 3 tbsp
Oyster sauce 1 tbsp
Rock sugar 1 tbsp

Directions:

1. First, blanch the fried gluten in boiling water to remove excess oil; soak the mushrooms in water for later use.

2. Heat oil in a pan, add drained mushrooms and stir-fry until fragrant, then add black fungus and carrots and stir-fry.

3. Next, add the fried gluten, sliced bamboo shoots, and rock sugar.

4. Once the rock sugar has melted, add the star anise and sauce ingredients, then simmer until well flavored.

5. Before removing from heat, add edamame and stir evenly to finish.

Tips:
1. If you can’t find fried gluten, you can substitute with traditional dried bean curd rolls.
2. If the fried gluten you bought is not pre-fried, you can skip the blanching step.
3. The water used to soak the mushrooms can be added in step 4 as well.
