Born in Burgundy, France—a paradise for food lovers—Chef Laurent has traveled the world and has been deeply inspired by the food cultures of Japan and Southeast Asia. In particular, his four-year stay in Japan left him in awe of the ultimate dedication and meticulous attitude of Japanese chefs toward their craft. This led him to creatively incorporate elements of Japanese culture into his French cuisine. When asked about the most distinctive feature of his cooking, Chef Laurent said, “I always create different dishes in every country I visit,” ensuring that diners are constantly surprised and delighted by his innovative ideas.

Mandarin Oriental Taipei has invited Laurent Peugeot to be a guest chef at Café Un Deux Trois on the hotel’s fifth floor, presenting “Playful Japan-France Fusion: A Michelin Dining Experience.” The four-course lunch set starts at NT$3,800+10% per person, while the six-course dinner set is NT$5,800+10% per person.
