Bee Village’s honey cakes are handmade using toxin-free free-range chicken eggs and 100% pure honey, with no added chemical flavorings, which results in such exceptional taste. Bee Village has partnered with Huisun Forest through an industry-academia collaboration by relocating beehives within the forest. Li Liyu, the chief advisor of the Bee Ecology Education Hall, explained that many people believe crystallized honey is fake, but actually, the opposite is true. Since honey contains monosaccharides including glucose and fructose, if the glucose content is higher than fructose and the storage temperature is below 16°C, plus the honey has low moisture content, it is prone to crystallization. Premium crystallized honey appears as fine sand or has a creamy texture. As for whether purchased honey should be refrigerated, Li Liyu said, “Refrigerating honey has three major benefits: first, it prevents ants from getting in; second, it protects the enzymes in the honey from being damaged by hot weather; third, it allows you to judge the authenticity of the honey based on whether it crystallizes. Therefore, refrigeration is recommended.”
