In addition to using imported ingredients and the chef’s professional craftsmanship, Junpin Hotel’s annual Mother’s Day cakes stand out in the market for their “customization.” Last year, the hidden jewelry gift box inside the cake sold nearly 100 units. This year, the creativity is focused on the exterior. The large hand-carved flowers on the cake are incredibly intricate — each flower takes the chef about three hours to craft meticulously, truly testing their skill and dedication. Moreover, these impressive floral designs can be customized in colors such as romantic purple, shining yellow, vibrant orange, fresh green, and sweet pink, based on your mother’s preferences or personality.

The cake filling layers flavors using premium fruit purées from the French brand Ravifruit, including strawberry, cherry, raspberry, and white peach. These are topped with a plain almond sponge cake and layered with pistachio cake underneath. The entire cake is then fully enveloped in white chocolate mousse and surrounded by Italian amaretti biscuits. When sliced open, the vibrant reds and greens intertwine, and the first bite delivers a perfect blend of sweet and tangy flavors with just the right richness.
Additionally, the pastry chef has showcased exceptional creativity by making premium “black garlic” the star of the cake. The surprisingly sweet-and-salty fusion is beyond what its pristine white appearance suggests. From the bottom up, the layers include black garlic sablé, hazelnut brittle, black pepper almond cake, and Madagascar vanilla mousse, topped with gold leaf and white chocolate decorations. Black garlic has much higher nutritional value than regular garlic, costing about NT$1,000 per kilogram — ten times the price of ordinary garlic. It lacks the pungent garlic flavor one might worry about, offering instead a refreshing blend of salty and sweet, making it a healthy yet delightful dessert treat.
