The Restaurant Gill in Rouen, France, was described by food critic Xie Zhongdao as serving cuisine that is “so simple it’s convincingly brilliant, so simple it leaves you wanting more, so simple you’ll want to come back… which actually makes it anything but simple.” Now, there’s no need to travel all the way to Rouen—visitors to Taipei can experience this mysteriously “simple yet extraordinary” cuisine. The Hotel Royal Parisian’s 1930 Paris Hall has invited Chef Gilles Tournadre of Restaurant Gill to make a special appearance. Two signature dishes from Gill—Chef’s Classic Rouen Squab and Herb-Layered Puff Pastry—will also be featured on the evening set menu at 1930 Paris Hall, making the experience even more anticipated.
Chef’s Classic Rouen Squab features unexpectedly vibrant purple-hued meat that looks luxurious, yet tastes light and pure when paired with the sauce, avoiding any heaviness—an understandable choice for a Michelin Guide signature dish (Photo courtesy of The Landis Taipei)
Chef’s Classic Rouen Squab features unexpectedly vibrant purple-hued meat that looks luxurious, yet tastes light and pure when paired with the sauce, avoiding any heaviness—an understandable choice for a Michelin Guide signature dish; the Herb-Layered Puff Pastry is crispy and delicate, perfectly embodying the “simple yet extraordinary” concept. French Chef Gilles Tournadre, who has a deep appreciation for Japanese culture, skillfully presents traditional French cuisine with a Japanese-inspired style of refinement and minimalism, resulting in refreshing and light flavors and adding new surprises to the dishes.
