GUSTOSO Italian Restaurant, renowned for classic Italian cuisine, introduces a white asparagus menu starting in April. The menu includes a soup dish, “White Asparagus Cappuccino with Morel Mushrooms,” rich in beta-carotene, vitamin A, and C. Featuring French white asparagus, which is only available for a brief three-month period each year, the soup is simmered with onions and other vegetables to create a rich broth, served with morel mushrooms and a dollop of creamy foam. It delivers an exquisite, velvety texture that melts on the tongue, bursting with the aroma of white asparagus and mushrooms. The hot appetizer is “Charred White Asparagus with Padrano Cheese Risotto and Semi-Soft Quail Egg.” The chef carefully selects freshly pressed extra virgin olive oil made from olives grown on the mountainsides of Sicily, Italy, to toss with fresh white asparagus, then naturally highlights the asparagus’s original form through charcoal grilling.

The main course, “Poached White Asparagus, Atlantic Cod, Argentine Red Shrimp, Q Layered Artichoke and Potato, Saffron Sauce,” features white asparagus poached in milk along with salt and pepper, vacuum-sealed and slow-cooked in a water bath at 65°C. This process allows the flavors to fully infuse the asparagus. It is artfully paired with pan-seared Atlantic cod, grilled Argentine red shrimp, Q-style thinly sliced potatoes, and a saffron sauce—preserving a richly varied medley of tastes that highlight the delicate flavors of each ingredient, culminating in a burst of endless possibilities and imagination on the palate.
