Tainan has so many delicious foods, and foodie Pingzi is here to recommend some tasty dry noodles. This visit was actually an unexpected discovery. The shop specializes in a proprietary sesame sauce x handmade noodles—the noodles are all made in-house, and the uniquely aromatic spicy sauce is rich, bold, and invigorating, making it super appetizing and satisfying. Spice lovers definitely shouldn’t miss the Spicy Chicken Shredded Dry Noodles or the Stir-Fried Soul Noodles. The prices are affordable, and once you try them, you won’t forget the great taste found along Chenggong Road in Tainan’s North District.

Good Taste Dry Noodles is located on Chenggong Road in Tainan’s North District, at the intersection with Hai’an Road (near the Hai’an Road entrance). It’s quite close to Shennong Street and Kangle Street. Drivers can only find street parking nearby. The shop features large glass windows combined with Japanese-style wooden decor, and a simple, rustic wooden signboard that makes passersby want to take a peek inside.

We originally wanted to go to Feng Lu Wei (also featured on “Travel King”), but it was closed. By chance, we parked in front of this shop, were drawn in by the aroma, and ended up at Good Taste Dry Noodles. We tasted the food and discovered this wonderful handmade noodle shop.

The door is especially thoughtfully designed, with a very large vertical menu posted. Just from the menu, you can see offerings ranging from local broths to beef noodles and wonton noodles—there’s a very rich selection.

The interior is spacious, with tables spaced far apart to avoid bumping into each other, making it very comfortable. With a Japanese style, the large wooden decor gives off a warm, homey vibe. It’s clean and tidy. Although it’s a dry noodle shop, it’s different from traditional noodle eateries, offering a fresh look and a very pleasant atmosphere. Air conditioning is provided, and at the very back is an open kitchen where you can watch the chef’s skills through the glass.

On the other side, along the wall seating area, everything is clean and tidy, making diners feel at ease. Next to the counter, there’s a drink cabinet for everyone to choose from, and nearby is a self-service area for seasonings and utensils.

There’s also a small side dish section. Each side dish is just 30 NT$, which isn’t expensive. They’re especially well presented with photos and descriptions of each dish, making it very clear and showing attention to detail.

There are many kinds of side dishes to choose from. Just looking at each one makes you want to eat them—Pingzi wants to try them all.

That day, I got this side dish that looks like pickled vegetables. It was so delicious—crispy with a slightly sour saltiness, really tasty.

The menu clearly lists the prices, focusing mainly on dry noodles and soup noodles, along with a variety of individual items and soups. The dry noodle flavors as main dishes all look amazing, paired with beef or wontons—it’s really impressive. Prices are reasonable, ranging from the cheapest 20 NT$ pork rice to the most expensive 120 NT$ XO Scallop Shrimp Sauce Beef Noodles. Soups start at just 25 NT$ and are also available. It’s such a fair price, truly a down-to-earth, affordable handmade noodle shop.

Stir-Fried Soul Noodles– 60 NT$. As soon as it’s served, you can see the neatly arranged handmade noodles, which are very comforting just to look at. Different from traditional plain noodles or Japanese ramen, Good Taste Dry Noodles breaks the norm in texture. It looks a bit like a hot version of cold noodle dishes—the noodles aren’t cold, but warm handmade ramen. One key ingredient is the generous topping of peanut powder, which adds layers of fragrance, richness, smoothness, and silkiness to the bowl. The sauce has some spice, and the spicy flavor is incredibly moreish.

Spicy Chicken Shredded Dry Noodles– 60 NT$. The spiciness here isn’t the Thai-style numbing spice like in Thai chicken, but more Sichuan-style. The overall flavor is bold, spicy, and invigorating, with a rich aroma. The chicken shreds are neither dry nor tough—they’re very well prepared. Spice lovers will absolutely fall for this flavor. Pingzi couldn’t stop eating once she tried it; it’s just so delicious.

Before eating, you have to mix the noodles first, combining the sauce with the handmade noodles so the flavor can fully infuse.

Handmade noodles mixed with chicken shreds, egg strips, and cucumber slices give the illusion of eating a spicy cold noodle dish. It’s very fragrant but also packs a spicy punch. The noodles are extremely Q and chewy, on the thinner and more curled side—definitely handmade noodles, and they’re incredibly delicious.

Mixed Soup– 40 NT$, with meatballs + wontons.

The wontons here are all handmade, each one plump, with a chewy yet elastic skin and tender, delicate filling. The meatballs are decently sized, firm and Q, with a great texture. The broth is light and sweet, not greasy, and pairs nicely with greens and eggs—very warming.

Thanks to this unexpected discovery of Good Taste Dry Noodles, who knew there was such a great handmade noodle shop on Chenggong Road in Tainan’s North District? Not only are the noodles great in texture, but the sauces are also highly recommended. If you love spicy food, you can’t miss this place!
