Seven years ago, WARMi used local pineapple from Bagua Mountain to launch a sun-baked pineapple cake delicacy; in 2016, drawing on Master Lan Sha Zhong’s 50 years of baking craftsmanship and using local ingredients, they launched their second Taiwan-characteristic “Honey Rich Sugar Cake.” Available starting August 1 at Taipei, Nantou, and Kaohsiung stores, it comes in “Original” and “Aged Plum” flavors, offering the rustic taste of time-matured pastries.

One of WARMi’s four co-founders, Master Lan Sha Zhong, went to Japan for further studies in his youth. For him, making honey cake is a skill he knows all too well, as well as a sweet memory of cake for Taiwanese people born in the 1940s and 50s. The Honey Rich Sugar Cake is simple yet not plain, replacing traditional refined sugar with sugarcane extract technology to preserve the essence of sugarcane from Yujing, Tainan.

In response to the upgraded ingredients, Master Lan Sha Zhong redeveloped the cake-making process and ingredient ratios, breaking from the traditional Japanese honey cake method of a 5:3 ratio. He uses a 6:4 ratio of egg yolk to egg white, adds Japanese flour, omits fats, and avoids artificial additives. The Honey Rich Sugar Cake, baked three times, has evenly distributed air pockets, exuding the natural sweetness of sugarcane and honey, with a firm chewy texture.

The Aged Plum flavor of the Honey Rich Sugar Cake uses green plums organically grown by indigenous farmers in Xiaolin Village, Kaohsiung, blended with an exclusive pickling recipe and aged in oak barrels with Balsamic vinegar, then matured in cellars. The richly flavored aged plum jam is thick and aromatic, offering a nuanced taste that transitions subtly from mild acidity to sweetness.
