Tonkotsu Ichidou Opens on 3/29 – Xinshierxiang Ramen Unavailable in Japan

The ramen lineup includes the signature Rich Seafood Ramen, Ichidou White Tonkotsu Ramen, Tonkotsu Seafood Tsukemen, and Taiwan-exclusive Xinshierxiang Ramen, priced between NT$190 and NT$300.

The broth of Itto White Pork Ramen is simmered for 14 hours using pork backbone and leg bones until they completely dissolve, creating an intensely collagen-rich and thick soup. The broth is then carefully filtered through a fine mesh multiple times to achieve a creamy, smooth, and mild texture. As for the Tonkotsu Seafood Tsukemen (dipping ramen), it's currently the most popular flavor. President Sakamoto Kōhiko has continuously refined and developed the recipe to perfectly blend tonkotsu and seafood, delivering a multi-layered and delicate taste in every bite.

As for the Taiwan-exclusive Spicy Twelve Flavor Ramen, the broth is based on a clear dashi, then blended with five types of miso and over ten kinds of spices to create a richly aromatic and complex flavor profile. Wang Yiren noted that its moderate level of spiciness offers a comforting warmth for both the heart and stomach. The dish is topped with cilantro, which, although not typically favored by most Japanese, is one of President Sakamoto Kōhiko’s favorite ingredients. He mentioned that cilantro has a unique fragrance and is the kind of ingredient that once you try, you can’t stop eating.

Regarding the ingredients used, Sakamoto Kōhiko said that apart from the flour, which is imported from Japan, all the main ingredients are sourced locally in Taiwan. As for expansion plans, Tonkotsu Itto is expected to open one more store this year, with hopes of entering the Chinese mainland market next year.
