After opening Chou Chou French Cuisine in 2016, where diners could enjoy classic French flavors, Lin Ming-Chien launched LONGTAIL Restaurant & Bar in Taipei’s Dunhua commercial district in 2017. Staying open until 2 a.m., the venue offers not only top-tier contemporary fusion cuisine but also creative cocktails, fine wines, and craft beers, providing night owls with a fresh dining choice.

LONGTAIL’s menu features à la carte ordering, simply divided into appetizers, main courses, desserts, and hot dishes. The restaurant specializes in contemporary fusion cuisine. For example, the famed Hong Kong dim sum item char siu bao is reimagined here with honey-glazed pork belly and Korean kimchi, presented like a Western-style burger. Braised oysters—a staple in Taiwanese stir-fry shops—are also given a Western twist, offering diners distinctive dishes they won’t find elsewhere.
