The purple yam pancake isn’t as common as sweet potato balls, but it’s a tasty snack worth trying. Its flavor becomes more aromatic the more you chew, offering a simple yet satisfying taste. “The texture is similar to that of sweet potato balls. After frying, the purple yam pancake is also pan-fried until both sides are crispy—crispy on the outside and chewy on the inside,” wrote Two Boys' Daily Food Journal on their social media page.
The owner is very particular about the quality of the purple yam. “There are always so many people whenever I go,” and “I could eat 50 of these!” say netizens. Next time you’re in Changhua for a weekend trip, don’t forget to grab a few to enjoy as you stroll around the night market.
