The brand soul of Le Méridien Xiamen belongs to Paris—black and white, the two extreme colors on the spectrum, weave together to define the identity of this renowned hotel chain, embodying timeless elegance, refined taste, and a stylish allure.
The Quube restaurant on the fifth floor continues the sophisticated design aesthetic of the hotel, dominated by black and white. The name “Quube” is a stylized version of the English word “cube,” so the restaurant’s exterior resembles a glass box. The interior features geometric, radially patterned gold ceiling designs, black marble walls, and floor-to-ceiling windows that interplay with reflected light, drawing the eye outward and enhancing the sense of space.

The dining environment is equally elegant and futuristic, featuring simple, unadorned black tables with just a single deep purple flower quietly placed on each surface, reflecting a restrained design style. Grayish-mouse and light coffee-colored sofas soften the coolness of the black-and-white palette, adding a touch of warmth and homeliness to the restaurant.
It’s worth mentioning that upon stepping out of the elevator on the fifth floor, you’re greeted by the Digital Art piece 《Monkey Tale》, created by German artist Stephan Reusse. Using thermographic (infrared) or laser projection techniques, the artwork projects live-action imagery of monkeys onto the walls, creating a vivid and playful scene.

Coincidentally, Quube also boasts large floor-to-ceiling windows that let in abundant natural light, creating a bright atmosphere. The outdoor dining area includes sofas, green lawns, and wooden flooring, while the evening view inside the restaurant is dreamy. Sitting on high stools with your legs crossed, sipping red wine, the ambiance is enchanting and intoxicating all night long.
On weekends, guests here prefer uncomplicated yet refreshing, vegetarian, and healthy brunch options. Therefore, the brunch menu offers fresh juices, Le Méridien signature breakfast breads, smoked salmon with crab and pineapple salad, main dishes such as apple duck breast with brandy cherry sauce, scallops and cod with caviar sauce, and is rounded off with soft-center chocolate tarts with berries, fresh fruits, and beverages such as tea or coffee.

In addition, the brunch also features a variety of creative eggs Benedict dishes, such as smoked salmon Benedict, ham Benedict, beef Benedict, and stewed spice eggs, while dinner offers chef-crafted European cuisine including Italian hunter-style chicken, red wine braised lamb shank, and seafood casserole platters—a true five-star dining experience.
Must Try
Scallops and Cod with Caviar Sauce

Featuring top-grade ingredients such as premium round cod and fresh Norwegian scallops, these are lightly seared and seasoned simply, allowing the natural flavors of the seafood to shine without overpowering them. Finally, Russian caviar and a buttery sauce are drizzled on top. The tender cod pairs perfectly with the silky caviar and butter, melting in your mouth with a luxurious and layered taste that highlights the sweet, fresh essence of the sea.
Italian Hunter-Style Chicken

A classic traditional Italian dish, this chicken is cooked in the hearty, rustic hunter-style method, delivering exceptional flavor. The chef prepares a broth using fresh ingredients like chicken bones, onions, and carrots, then marinates chicken drumsticks in red wine until flavorful. These are then slow-braised with red and yellow bell peppers until tender and juicy, resulting in a soft, smooth texture. Served in a traditional red Staub cast-iron pot—recommended by 20th-century French culinary legend Paul Bocuse—the aroma wafts out when the lid is lifted, offering another delightful surprise when the dish is presented.
