When it comes to the most surprising culinary delight in Matsu, it might not be the richly aromatic old wine noodles that leave a lingering taste in your mouth, nor the crispy and savory Matsu burger known as the “Jiguang Bun.” Instead, it’s a bowl of super delicious wontons – a full 20 pieces. What makes this wonton soup special isn’t just its fragrant aroma and bouncy, tender filling; most importantly, it has the almost magical ability to make you feel like you’re “melting all over” with every bite.

The reporter paid a visit to the legendary Matsu wonton shop “Wanjiaxiang,” renowned for making people feel like they’ve melted away, specifically its second branch. The raw wontons at Wanjiaxiang have extremely thin wrappers. Before cooking, when held up to the light, you can see beams of light passing delicately through the wrapper – one of the secrets behind the shop’s delicious wontons.
Using an ultra-thin yet chewy wheat flour wrapper, specially selected fresh pork belly is minced by machine, revealing a beautiful pink color. Then, the wrapper is placed in the palm of the hand, and a wooden spoon is used to gently spread the pork onto the wrapper. With a pinch of the hand and a scrape of the spoon, a freshly wrapped wonton takes shape in just five seconds in the hands of the shop owner, Ms. Chen.

According to Ms. Chen, who represents the second generation of this family-run business, every single wonton at Wanjiaxiang is made by hand to ensure freshness and optimal flavor packed with aroma.
Aside from the delicious wontons themselves, what makes the wonton soup truly outstanding is the rich bone broth. The aromatic broth, paired with preserved vegetables, sprinkled with white pepper and chopped scallions, cradles nearly 20 cooked and freshly scooped wontons resting gently in the soup. Scoop up one wonton along with the broth, and you’re first greeted by the deep, savory richness of the stock – salty yet fragrant. Then the silky wrapper melts into your mouth, and as you bite down, the wrapper and filling separate, allowing the bone broth to blend with the fresh pork belly, creating an irresistible taste that has you going back for more. By the time you come to your senses, the entire bowl of wonton soup has disappeared without a trace, leaving you to exclaim, “Owner, another bowl, please.”
