The restaurant originally offered an all-you-can-eat steak option, but due to some difficult customers, the owner became very disheartened with running the restaurant. “I felt we were putting in so much effort, so why were we being treated like this?” In a fit of frustration, he switched to an à la carte model. Recently, for the winter season, they introduced hot pot dishes, featuring three main soup bases: signature beef broth hot pot, spicy beef broth hot pot, and Alian big bone hot pot.

“Our broth is made by simmering nearly 100 big bones a day to create a concentrated base, then diluting it — guaranteed to be tasty. We also add sugarcane roots to enhance the natural sweetness,” the owner said with a smile. “The simpler something is, the harder it actually is to perfect. All our dishes emphasize tradition — there’s no such thing as getting rich quick or taking unrealistic shortcuts.” For example, the braised pork rice alone was learned from a late Japanese chef. “He taught me to scrub the pork clean with a horseshoe-shaped brush before cooking, because that affects the flavor of the dish itself.” The hands-on teaching made the owner understand and embrace the spirit of craftsmanship.

In addition to the beef broth base, the restaurant also serves an “Alian big bone hot pot,” which the owner first encountered in Alian District, Kaohsiung City. “This is actually something you’d only find at rural banquet feasts. What I’m selling is the spirit, not just the taste. My offerings are different from what’s available on the market — from aroma to texture, they’re still delicious even when cold. That’s what makes our food special,” he said confidently.

Speaking of the braised pork rice, unlike common versions using ordinary pork, the restaurant opts for higher-grade, better-textured black pork, which remains tender even after long cooking, has a springy bite similar to wild boar, and lacks the usual porky smell. It’s also sweeter than white pork. The owner places great emphasis on kitchen cleanliness. Braggingly, he says, “I’m confident our braised pork rice could be considered Michelin-level.”

For steak, the restaurant offers Wagyu by weight or à la carte American beef. The Wagyu is divided into cuts like marbling-grade, ribeye, New York strip, and short ribs. À la carte beef options include American bone-in short ribs, American Ohio ribeye, American Prime marbling-grade steak, American Prime thick-cut sirloin, or a jumbo 15oz American Prime “Big Eater” steak. Doneness levels are customizable. For non-beef eaters, the restaurant also offers Hungarian lamb, pork, and deep-sea cod fillets. Ingredients are supplied fresh daily and sold until sold out.
