Doux Innovation Private Kitchen offers a three-story space: the first floor has 12 seats, the second floor is a molecular art gallery, and the third floor serves as office space — a truly creative design. Gabriel, like a forever-young boy full of dreams and naivety, always emphasizes that every dish must be made by his own hands. The 15-course meal consists entirely of novel, original molecular dishes. “I hope every guest here can enjoy a truly unique experience. I don’t know when they’ll come back, but I want every memory of this place to be wonderful.””

On the day of the visit, the first dish served was traditional old-fashioned black tea. The staff explained that it was a childhood memory of Gabriel, and the taste lived up to its name—truly old-fashioned and authentic.

Gaggan is a molecular gastronomy restaurant run by chef Gaggan Anand in Bangkok, Thailand. It has been ranked the number one Asian restaurant for three consecutive years. This dish is Gabriel’s tribute to him.

Degree Childhood Memory
Located in Spain, “El Bulli” is a world-renowned restaurant famous for its molecular gastronomy. Situated in the Rose City of Catalonia, Spain, it was ranked No. 1 on the “World’s 50 Best Restaurants” list by the British professional food magazine “Restaurant” six times. This dessert was reimagined based on Chef Gabriel’s childhood memories, designed as a bite-sized chocolate cookie and chocolate beans — his childhood favorites!

Tapas
It is a very famous Spanish dish, originating from the time of King Alfonso X of Castile during the Spanish medieval period. When he visited towns, due to the coastal environment with strong winds and sand, the tavern owners would cover the wine with ham and say, "This is your wine and a 'lid'." In Spanish, "tapa" means "lid," and it was originally served as an appetizer with drinks. The name comes from this. A variety of tapas, when combined, can even make up a full meal!

Spanish Cold Soup Gazpacho
Originating from Andalusia in southern Spain, this ancient traditional cold soup is served by the restaurant in test tubes — equally creative. Gabriel jokes, “Other people put wine in test tubes, we put soup!” Despite the self-deprecating humor, it shows the restaurant’s care and selection of ingredients.

Collagen
It is made by simmering the scales of grouper for three to four hours, topped with vitamin C-rich oranges. The oranges provide vitamin C, which can be eaten on their own for their tartness or combined with the dish for an even better flavor.
