A new beef noodle shop has just opened in Taipei’s Gongguan area. This one, named“Ai Jia Noodles”, emphasizes the use of carefully selected ingredients. Its broth, simmered for 72 hours, pairs perfectly with springy, chewy noodles that are simply mouthwatering. The shop’s signature dish, Spicy Pickled Cabbage Beef Noodles, features a unique homemade pickled cabbage that emits a distinctive aroma, combined with a specially crafted broth and tender slices of beef that are truly addictive.
The shop uses hand-pulled noodles for a bouncy texture, and the broth is simmered for 72 hours using a special red wine braising method. The emphasis is on all-natural ingredients, with no chemical additives. The beef is also one of the key factors that make the whole bowl so delicious.Meat is a fascinating thing—different slicing techniques can affect how tender, springy, or juicy it feels. The chef has developed a unique cutting method that gives the beef slices both juiciness and bite.. On the table, you’ll find chili, pickled cabbage, and raw garlic, which you can add according to your personal taste. For those who don’t eat beef, there are other options like pork hock, fish slices, lion’s head meatballs, and vegetable noodles.

The unique Hakka-style pickled cabbage fermentation technique has been passed down through three generations. Organic mustard greens are sun-dried for several days before being placed in an earthenware jar to ferment for 49 days. The pickled cabbage is crystal clear, tangy with a hint of sweetness, and emits a special fragrance that is truly addictive—you’ll want to keep eating more. For those who enjoy spicy food, try the Jiancheng Boiled Beef or Fish Slice Noodles, where the fragrant heat will make you sweat with delight.

You can also pair your beef noodles with Hong Kong-style dim sum. The shop’s newly launched combo is something you won’t find anywhere else on the market.Zhang Jialing, marketing planner at Ai Jia Noodles, said that while steamed dishes are typically associated with Hong Kong cuisine, the shop wanted to use the steamer to create Taiwanese-flavored snacks.Zhang explained that Taiwanese people prefer lighter flavors and enjoy the natural taste of ingredients. Steaming helps preserve the original flavors of the food. Try Osmanthus Taro, Sakura Shrimp Cabbage, or White Jade Steamed Beef.
Ai Jia Noodles has only recently opened, but the shop is already running several promotional activities. These include getting a free side dish when you check in on Facebook, free soup or noodles with a student ID, and a 50% discount for birthday guests. Additionally, for every purchase made on Saturdays, Sundays, and Mondays, the shop donates NT$10 per bowl to the Bo’ai Foundation. The goal is to raise NT$200,000 by July 31 to help build mini-libraries for children in the Wufeng and Nantun areas, continuing the spirit of love, happiness, and sharing.
